Griddlin' on the Grill with the Kettle-Q

I have several posts related to cooking outside and I am always looking for ways to expand on the many ways to cook on the Large Big Green Egg.  I saw the Little Griddle Kettle-Q Round Griddle and knew I had to have it.

While cooking right on the grill surface is a great way to cook nearly everything, there is something rebellious about having the option to cook an omelet or steak sandwich on the grill. Anyone that has used a griddle for cooking hamburgers knows, it can be a messy, smoky affair that leaves a smell in the house that can stay for hours or even days.  

The griddle takes those problems and moves them outdoors.  The griddle is an impressive, heavy piece of stainless steel.  It is one piece with several smoke vents under it that allows the smoke to escape.  It has a grease well that extends across the entire front of the griddle to make it easier to clean up later.

TIME FOR TESTING

To test the griddle, I started up the grill using the Aura Electric Outdoor Charcoal Lighter (which I prefer to the Big Green Egg version because the handle is longer).  Once I had a good fire going, I put the griddle on top of the grill and let it heat up for a while.  

One I had a hot surface, I lightly toasted the top of the buns before I did anything else.  Once that was complete, I threw on some hamburgers (my preference is the 
America's Test Kitchen/Cook's Illustrated process for the meat), but in this case, I just had some 85/15 ground beef since I wasn't worried about them drying out.  

I got them onto the griddle and flipped them a couple of times.  I am too cheap to buy a 
ThermoWorks Thermopen, but I always use a ThermoWorks Thermopop which is fast, inexpensive and fantastic for my needs.  Once I had the burgers to the desired temps, I moved the grease to the back of the griddle and put the bottom buns on the front of the griddle, placed the hamburgers on them, put American cheese on top of the burgers, and then placed the top of the buns over the cheese.  It only took a few seconds for the cheese to melt, and I pulled them off.  

Once we had them on the plate, I remembered why I wanted the griddle.  The burgers were juicy and tasted fantastic.  I should note that I was using Cherry wood chunks, but I would suggest a heavier wood like Mesquite to get more smoke if you like a smokey flavor because I did not taste as much smoke as when I place the meat right over the flame.

All in all, I was very impressed with griddle.  It performed like a champ and the results reminded me of the fantastic soul burgers at Earnestine & Hazel's in downtown Memphis that I haven't had for years.  The cleanup obviously took more time than just cooking the burgers directly on the grill, but it was easier than cleaning up the kitchen after cooking burgers in the house.   I can't wait to try my hand at "Philly Cheese Steak" sandwiches.

Subscription On-Demand Music Streaming - The Pros and Cons

Now that Apple has entered the on-demand subscription music streaming market, I see a lot more chatter on the pros and cons of subscription streaming.  Keep in mind that music streaming has been around since Rhapsody launched their service back in 2001, so a lot of people are already aware, but there is still a huge untapped market out there that doesn’t know how to weigh the pros and cons.  In this article, I will give you a few different use case scenarios and the arguments for and against on-demand subscription streaming.

I BUY ONE CD A MONTH AND I AM HAPPY

If you are content with paying for one new album a month, then I would just continue doing what you are doing.  Paying $9.99 a month to rent that one album is not a smart move.

I BUY ONE CD A MONTH BECAUSE IT IS ALL I CAN BUDGET

Do you feel that you will listen to a lot of albums if you had access to millions of them?  If so, you may be the type of person that would benefit from streaming.  However, you would have to look at music as an experience rather than an investment.  In other words, you will have a world of music at your fingertips while you are able to pay, but you will have nothing other than past experience when you quit.  If you bought an album a month, you would have that one album to listen to forever.  If you decide to just buy that one album a month, just make sure you choose wisely, my friend.

I BUY A LOT OF MUSIC EACH MONTH

If you buy a lot of music, I think streaming was custom made for you.  For ~$9.99 a month, you can have access to 30 million or so songs and be able to listen to as many albums a month as you like.  You will still have money left over to buy music if you feel there is value in that, or if an artist isn’t available for streaming, but you can also put that extra money away for a rainy day.   Many audiophiles subscribe so they can audition full albums before buying them.  

I HAVE A LARGE LIBRARY ALREADY

If you have every album you ever want to hear, stick with those.  Subscription services are for people that want new-to-them music.  However, most people with large libraries are music fanatics.  A streaming service would put a much deeper catalog of music at your fingertips.  Also, if you ever quit the service, you would've still have your large library to fall back on.

I HATE CURRENT MUSIC

There are a lot of people that do not like the rap, hip hop, club, dance stuff, etc. that is out there.   However, I don’t know that they have been exposed to the numerous artists that don’t make it to pop radio or TMZ .  For example, Jason Isbell, The Wild Feathers, Ryan Adams, Wilco, etc. aren't usually featured on Entertainment Tonight, but make great current music that may not be what you are exposed to in the current media environment.  

The fact is that there is still a wealth of great new music no matter your which genres you like.  However, even if you don’t want to hear new music, there is a wealth of older music available.  For example, if you have a couple Rolling Stones albums, you may be delighted to have access to all (or nearly all) of their music.  Even if you don’t like Rock, the situation applies to every genre.   Yes, you will occasionally encounter an artist that isn’t available on the subscription service you use, but you can still always buy their albums if you really want to hear them.

I AM YOUNG AND WANT TO BUILD A LIBRARY

If you goal is to have a library rather than experience tons of music, then I don’t think subscription services are for you.  However, you may want to try Spotify’s commercial supported, lower resolution, free tier to be sure that you don’t buy albums that have one good song and a bunch of filler.

OTHER CONSIDERATIONS

The other scenarios are more general.  Do you want on-the-go convenience?  Streaming services are easy because you could be at the beach and listen to a ton of Jimmy Buffett and then go to the mountains and spin John Denver's catalog.  It is about having millions of songs at your fingertips at all times to fit any mood.  NOTE:  You need wifi access, cell data, or have already downloaded the music to listen to when you are offline. 

MAIN DOWNSIDES

From what I understand, there are three main downsides.  

The first is that there may be ~30 million songs available, but that doesn't mean they have everything.  For example, The Beatles are not currently available via on-demand services.  However, you could more easily fill in those blanks than the other 30,000,000 songs that the service has available that you don't.

The second is the lack of ownership.  If you paid for the service for 10 years at an average of $100 a year, you could have bought a thousand dollars worth of music you would own forever.  With streaming, if you stopped paying, you would no longer have access to the music.  That brings up the point of whether you listen to music for the experience or treat it as a long term investment?  Personally, I own about 1500 albums.  At an average cost of around $10 an album, I am in for $15,000.  If I had put $120 a year toward streaming instead, I would have had access to millions of albums for 125 years.  Since, I probably won't live for another 125 years, I could take that extra money and put it toward artists like The Beatles or put into a savings account for that matter.   As I mentioned before, if you don't buy a lot of music, you really don't need streaming unless you simply want it for convenience.

Third is that most streaming services use audio compression.  Spotify uses 320k Ogg Vorbis files and Apple uses 256k AAC.  On some songs, on some systems, you might be able to tell a difference between the two if they are played back to back, over and over.   

However, many ABX tests have been done on the Hydrogen Audio forums and they believe transparency for MP3s occurs at ~192k and even lower bit rates for Ogg and AAC.  In my humble opinion, once you get to ~256k, the main issue with sound quality is related to the mastering.  

As a side note, many CDs were mixed with the "loudness wars" in mind.  As a result, they have compressed dynamic range, and in some cases, flattened wave peaks.  While Apple uses 256k AAC, they are unique because they could have the benefit of artists that have supplied "Mastered for iTunes" versions of their albums.  If they use these versions, and currently there is actually nothing on Apple Music indicating when they are "MFiT", the theoretical sound quality loss from audio compression could be equalized or bettered by the decrease in dynamic range compression.

All that being said, even for audiophiles there is Tidal and other services that stream in lossless formats if they don't mind paying twice as much for the service and living with less features than the competitors.   They are even working toward Hi Rez streaming that might even make Neil Young's golden ears happy.  

FINAL THOUGHTS

Finally, subscription based on-demand streaming is not for everyone.  My parents, for example, don't listen to enough music to make it worthwhile.  However, for music fanatics, I think it is the best way to discover and listen to album.

Is Apple Music Perfect??

I will cut to the chase...No, it isn’t perfect.  However, none of the other services available are perfect, either.  However, it is a great service that I have been enjoying thoroughly since it came to market and it is FREE for 3 months!

What I Like About Apple Music

I have three words for you:  Siri, Siri, Siri.  I have heard some complaints at how much has been packed into the iOS app and how it has gotten more complicated.  Yeah, it has “For You”,  “New”, “Radio”, “Connect”, and “My Music”.  Just because it has tons of features, it doesn’t mean you have to use every single feature all the time.  I tried Beats 1, for example, and it did not fit my taste.  Nothing wrong with that.  I also use Adobe’s Photoshop app and have never used the 3D feature or many other features.  It is still one of my favorite programs for photography.

That being said, any idiot can use Siri. You simply push a button and say, for example,  “Play James Taylor’s Newest album” and his newest album “Before the World” will start playing.  Want to add it to your music collection?  Just say “Add the album to My Music” and it is added.  Want to hear a specific album?  I just say “Play Sonny Rollins Way out West” and it starts playing.  For those that are so confused by the app, just stick to this format and you should be just fine.  You can also just say “play top hits from 1977” or  “let’s listen to some jazz” or “play something by the Beastie Boys” and it simply starts playing.  Since it is intertwined with my collection, I can also say “Play Revolver Mono Remaster” and its starts playing The Beatles “Revolver (2009 Mono Remaster)” even though it isn't available on Apple Music.

To test the ease of use, I asked my girlfriend, that never uses music apps (she likes SiriusXM in the car with an occasional CD thrown in for good measure), to play Journey's Escape using the app.  Five seconds later, her album was playing.  She intuitively knew to use the search button and type in the album name.  

To say it is complicated is to say that plumbing is complicated every time you use the faucet.  

For You 

I have mentioned that I loved Beats “For You” section and I am very happy they brought it over to Apple Music.  I also thought ”The Sentence” was a dumb gimmick and it is gone.  The “For You” section is fantastic.  You start the service by choosing balloons of your favorite genres and artists and it continues to gather more information for suggestions by who you follow.  

The choices they come up with have been interesting, imaginative, and simply a fantastic way to discover new music.  I have tried every service out there and the curation on Apple Music is the best (at least for me).

Your Own Music Along for the Ride

I was already a member of iTunes Match, but having that music available alongside the on-demand streaming app just makes me want to use the service more often.   I have seen a couple bugs in my collection, like the app showing a picture of Koko Taylor when I pull up the artist Willie Dixon, but it is hardly even a real problem and I am sure Apple will get the issue fixed in time.  However, having the Beatles available at the touch of a button or via a voice command is simply priceless.

New Stuff

The New Music section is a welcome update from when I tested Beats Music last year.  Now you can get to all of the new releases much easier.  I also like the tab at the top that lets you choose different genres.  That way, if you are a fan of Jazz music, you don’t have to suffer through a bunch of releases in other categories.  Just go straight to Jazz and you have “new music”, “hot tracks”, “recent releases”, “top songs”, “more top charts” (this pulls up top songs, albums, and videos), playlists, and more.  

I should mention that I have several books (like All Music and Rolling Stone Album Guide) about music, so I love to dig deep into certain genres.  Personally, I consider this type of variety in many genres to by one of the best things about the service, but I can see how some would consider it complicated.  For those people, see my section above related to Siri.

iTunes

iTunes got an overhaul to include Apple Music.  I personally prefer using iOS since you get Siri, but there is one major plus to the iTunes implementation….multi-room Airplay.  While I don’t know why this isn’t implemented on iOS, it is nice to have it built right into the iTunes interface.   The Beats1 radio service is not currently compatible with Airplay in iTunes, but you can still use Airfoil to send audio where you want it.  

Complaints?

Overall, they have given us a lot of options.  However, I still have a few small complaints:

1.  I will complain about the lack of Apple Music Multi-Room Airplay implementation in iOS until the cows come home.  iOS is able to do this without an issue with the Whaale app, so it makes no sense that this isn’t available right now.  

2.  Remote app or Apple Music on iOS needs to be updated to control Apple Music running on a computer.  You can control Spotify and Rdio running on OSX with their iOS apps, so there is no reason Apple can’t get this done. 

3.  Lack of continue play - When a song ends, I want to continue to listen to related music.  I don’t want music to end until I tell it to.  Rdio already has this feature.

4.  Lack of bit rate adjustability - A lot of people want to use lower bitrates because of their cellular data plans.  The other services let you independently control the bitrate on cellular and wifi.  Apple Music needs this, too.

5.  Lack of choice in artist radio - Rdio has a slider for "artist only" that slides to "adventurous".  Nothing like it on Apple Music.

6.  No AppleTV?  Really Apple, you don't even support your own stuff?  It is supposed to be coming in the Fall, but I want it now!

7.  I love the ability to watch videos and I like how easy it is to find video in iOS (Tidal could learn from the Apple implementation).  However, I could not find a way to open it in full screen on the iPad, there isn't a native Airplay button for video, and when I tried mirroring from iOS the screen would go black.  If this is some sort of licensing issue, Apple should have fought harder to get Airplay compatibility. If it is a bug, hopefully, it will be resolved soon.

8.  Bitrate - I would love to see lossless streaming for more money (like Tidal), but I know I am just dreaming.

Final Thoughts for Now

While there are more features and bugs (or things missing) that I mention here, keep in mind that the service is on version 1 and it is free for 3 months.  That makes it a "no brainer" to at least give it a try if you are on iOS (it won't be on Android until the Fall) .  I have mentioned my love for Rdio in the past  but Apple Music may be enough to get me to switch.  The Siri integration and iTunes Matching features are just huge advantages even if Rdio has so many great features that Apple currently doesn't match.
